20 minutes
Grease standard loaf pan with Coconut oil and line the bottom with Parchment Paper (cut to fit with kitchen scissors)
Preheat Oven to 375 degrees
note : this is Great for those super ripe bananas the ones you didn't eat quick enough or freeze in time for smoothies
45-55 mins - until knife comes out clean
10 - 12 slices
4 Ripe Bananas Mashed (this should be at least 1 cup)
1/4 Cup Coconut Oil
!/4 Cup Raw Coconut Sugar
4 Organic Eggs
2 teas Pure Vanilla Extract (a Favorite is Simply Organic Madagascar)
1/2 Cup Raw Coconut Flour
1 teas Baking soda
1 1/2 teas Cinnamon
1/4 Cup Chopped Raw Walnuts
1/4 Cup 100% Cacao Chips (Pascha Organic unsweetened 100% Cacao)
Mix the Flour Baking Soda and cinnamon in bowl toss with a fork and set Aside
In Mixing Bowl mix the Coconut Flour and Coconut Sugar until creamy with a hand mixer
add the Eggs and Beat until smooth
add in Vanilla
add the Flour mixture half and half with the Banana's mixing after each - just until
moist and smooth
add the walnuts and chips and mix lightly with spoon
Pour into loaf pan
Bake at 375 45 - 55 mins until sharp knife comes out clean
Best to let cool on rack and wrap in wax paper and foil to keep in flavor
and moistness - or place in covered single serving containers in refrigerator for a
quick Grab N Go's
