Easy & Delicious Cucumber Soup

We are quickly approaching Spring Season and the natural time for detoxifying your organs; a Spring Cleaning!  I practice gentle detoxification consistently throughout the year with the help of my Green Warrior Smoothie.  This Simple & Yummy recipe allows you to benefit from a gentle detox as well.


Cucumbers are from the same plant family as squash, pumpkins and watermelon. They are incredibly hydrating as they are approximately 95% water as well as cooling making them the ideal summer vegetable(fruit). 

They provide useful electrolytes and make great additions to cold-pressed juices like celery and green juices.

Cucumbers offer vital micronutrients and antioxidants yet are low in calories. This makes them Ideal for weight management along with their natural detoxifying and cleansing effect on the body.  They are a natural diuretic which helps to safely clear more waste and toxins from the body.

Cucurbitacins are the diverse protective plant compounds in cucumbers that contribute to their detoxifying effect.

Here are the simple Ingredients - It is always helpful to Organize your ingredients before jumping into the recipe. 

Organic English Cucumbers, Organic Haas Avocado,sweet onion, Fresh Lemon, Bragg Apple Cider Vinegar, Filtered Water, Sea Salt, Cracked Black Pepper, Cardamom, Kelp Granules, Fresh Cilantro

We have peeled the organic English Cucumbers and carved out the seeds (English cucumbers have very little seeds) with the edge of a Teaspoon. Simple recipe just place all ingredients into your high speed blender (NutriBullet RX or Vitamix are ideal) and blend for 1-2 minutes.

 

 

 

 Ingredients - (Serves 4)

2 Organic English Cucumbers Peeled and seeds Removed

1 Large Haas Avocado; peeled and pitted

1/2 Medium Sweet Onion; Skin Removed and quartered

2 T Extra Virgin Avocado Oil

2 T Fresh Squeezed Lemon Juice

2 T Bragg Apple Cider Vinegar

1 1/2 C Filtered Water

Pinch Sea Salt

1/4 Tsp Cracked Black Pepper

1/4 tsp Cardamom

1/2 tsp Kelp Granules

Method~

1. Peel the Cucumber, cut lengthwise and remove seeds with edge of standard teaspoon. Add all ingredients to your blender ( high speed smoothie style blender works best) pulse or blend until smooth.

2. Pour the soup into serving bowls and top with fresh cilantro and more cracked pepper or Kelp granules (helpful source of iodine).  Serve with your favorite Gluten-free toast or crackers.
